In this talk we discuss the impact of various number of light quarks colors $N_c$ and flavors $N_f$ on the dynamical chiral symmetry breaking by using the Nambu-Jona-Lassinio (NJL) model of quarks. We also sketch the quantum chromodynamics (QCD) phase diagram at finite temperature $T$ and/or chemical potential $\mu$ for various $N_C$ and $N_f$.

In this talk I will review some of the effects of hyperons on the properties of neutron and proto-neutron stars with an emphasis on the so-called "hyperon puzzle''. I will discuss some of the solutions proposed to tackle this problem and re-examine also the role of hyperons on the cooling properties of newly born neutron stars and on the development of the so-called r-mode instability.
